About Bonusmantle

Bonusmantle is a Melbourne kitchen that stopped pretending food is simple.

Bonusmantle has been cooking in Southbank since 2016, running two sides of the same business out of one small kitchen on Melbourne Street — full-service event catering for launches, weddings and awards nights across greater Melbourne, and a weekly chef-prepared meal delivery service for people who want proper food on a Wednesday night. We built the company on a simple idea that has never changed: if the food does not still taste right at guest number three hundred, or on day three in your fridge, then whatever we did before that point did not matter at all.

Our Story

It started with one bad dinner and a lot of stubbornness

Declan Fitzgerald opened Bonusmantle in a small Southbank kitchen after twelve years working the line in restaurants around Fitzroy and the city. The business began as a private catering operation for friends and neighbours, then a review website wrote something unkind about one of his early events, and it stuck with him.

Rather than argue, he rewrote the entire operation. Chill times recorded. Venue walks before quotes. Written contingency plans for every event. Within four years, the same reviewer who had criticised the earlier event booked us for his own wedding.

The meal delivery side came later, in 2019, when regular catering clients kept asking if they could eat our food more often than once a year. It is now a third of the business and the reason our kitchen has grown to six full-time chefs.

Our Philosophy

Four rules we will not break

Everything else in the business can adapt. These four cannot, and they show up in every event and every delivery box.

Chill discipline over everything

Hot food keeps cooking after it leaves the stove. Every batch is blast-chilled within forty minutes and any tray outside the window is rejected the same day.

Walk the venue before quoting

Access, power, cold storage and clearing routes all change the menu. We inspect before we put a number on paper, every single time.

Write it down or it does not exist

Contingency plans for weather, guest numbers changing late, and equipment failure. On paper, held by the on-site lead, updated before every event.

Same crew, end to end

Front-of-house staff are trained in-house and rostered for the whole night. Guests get familiar faces, organisers get one point of accountability.

Started as an experiment for catering clients who wanted to eat our food more often than once a year.

Blast-chiller installed

The single change that raised the quality of every meal plan delivery — and eventually changed our whole menu structure.

Our Kitchen

One kitchen on Melbourne Street

Everything we serve comes out of our own kitchen. Catering prep, meal plan cooking and every tasting session happens in the same room, which means problems get caught before they reach a customer.

We buy from growers around the Yarra Valley and from Queen Victoria Market on a weekly cycle. When a product is not at its peak, we swap it, label the change and tell you the same day. Silent substitutions are not something we do.
