Catering that survives contact with a real venue
Most catering problems are not recipe problems. They are logistics problems, and we plan for them before the first plate leaves our kitchen.
We work from our prep kitchen in Southbank and our roving hot boxes, which means we can hold temperature across a long service without turning everything into a stew. Cool room checks happen at three points the morning of your event, and every dish gets a written hold-time so your venue manager knows exactly what is coming.
Menus flex around the seasons rather than the other way around. If the Spencer Street rock flathead is not right that week, we swap it and tell you the same day — no quiet substitutions on the night, no surprise proteins.
Kitchen to door in one chain
Nothing gets outsourced. Prep, cooking, plating and service all move through our own team, so accountability sits in one place instead of five.
Seasonal produce sourcing
We buy from Victorian growers and the Queen Victoria Market each week, and adjust the menu when a product is not at its peak.
Allergen documentation you can hand over
Every dish arrives with a plain-language allergen sheet, so venue staff and guests with intolerances are never guessing.
Full pack-down included
We do not leave tables of dirty glassware behind. Our crew stays until the space is back the way your venue expects it.

How a Bonusmantle event actually runs
Six steps from first enquiry to your final cleared plate. Nothing is skipped and nothing is assumed.
Enquiry and venue walk
We take your date, guest estimate and venue address, then visit the space to check access, power, cold storage and clearing routes before anything is quoted.
Menu direction and quote
Within three working days you receive a draft menu matched to the season, a full per-head quote and a list of anything we need from your venue.
Tasting session
Confirmed bookings come to our Southbank kitchen and taste the actual menu as it will be served, including the sides and sauces.
Firm numbers and dietary mapping
Ten days out we lock guest numbers and map every allergy onto a named plate, so nothing gets figured out on the night.
Event day production
Prep starts at 5am. Hot boxes, cold chain and service equipment are loaded, checked against a written manifest and dispatched to your venue.
Service and pack-down
Our crew runs the service, clears each course as it finishes and stays until the space is returned to your venue's original condition.
